  • Soak chana overnight.Discard water and pressure cook chana 5-6 whistles with little salt and baking soda. Release steam after 5 minutes and check softness.Mash few chana to thicken the gravy.Heat oil in a pan and sprinkle half crushed whole garam masala and ajwain. Add chopped onion and fry.Add chopped tomato,salt and fry till soft.Add onion and ginger garlic paste and fry till well browned.
  • Now add chole /chickpeas and toss.Add turmeric,red chilli powder,amchoor powder,tomato puree, kitchen king masala,kasoori methi and toss.Add the stock of chickpeas and boil till chole is done.Sprinkle ghee and chopped coriander leaves.Serve hot with bhature,phulka or any Indian flat bread along with onion rings and lemon.
